Chimay Bleue este o bere belgiană de epocă în stil Trappist cu arome fructate și cu o istorie aparte. Se spune despre Chimay Bleue că este cea mai puternică și cea mai complexă dintre berile Trappist preparate la Abația Notre Dame de Scourmont. Chimay Bleue dezvăluie un buchet de mirodenii și fructe ceea ce este specific berilor Chimay . Gustul amar trădează cerealele foarte bine rumenite. Inițial Chimay Bleue era preparată doar pentru Crăciun și de abia în anul 1958 a început să se fabrice cu regularitate. Îmbuteliată în sticlă mare berea primește numele de Chimay Grande Reserve . Pentru a o servi se recomandă să torni încet berea într-un pahar ușor înclinat astfel încât sticla de Chimay Bleue să nu atingă paharul.
