Australia produce apa-de-vie din trestie de zahar de aproape 150 de ani, castigandu-si locul de drept pe harta mondiala a romului. Distilat in alambicuri, marea complexitate aromatica a lui Plantation Australia 2007 isi datoreaza personalitatea drojdiilor speciale folosite in timpul fermentatiei. Rachiul este mai intai fermentat timp de 12 zile cu Schizosaccharomyces pombe, o drojdie foarte rara in lumea romului, si dunders. Este apoi urmata de o fermentatie de trei zile cu Saccharomyces cerevisiae. Distilat in 2007, Plantation Australia a fost invechit pentru prima data timp de 13 ani in foste butoaie de bourbon, in pivnitele Distileriei Beenleigh Artisan. Cele 21 de butoaie alese de Alexandre Gabriel au facut apoi calatoria pe mare pana la Javrezac, in regiunea Charente din Franta, unde romul a fost invechit inca un an in butoaie de stejar francez Maison Ferrand. In stilul de semnatura Plantation, aceasta tehnica de invechire dubla evidentiaza atractivitatea foarte expresiva si complexa a acestui rom australian de 15 ani. Miros: de fructe cum ar fi piersicile, caisele cu note de vanilie proaspata, nuca de cocos, stafide si note florale de iris si liliac. Gust: fructe fierte, citrice cu note de cacao fin. Finisaj de fructe exotice cu note de vanilie si lemn.
