Cremant de Bordeaux a aparut oficial in 1990. Acesta trebuie sa fie produs in cadrul denumirii Bordeaux urmand metoda traditionala numita in trecut „metoda champenoise”. Compania Celene este specializata din 1947 in producerea de vinuri spumante. Situata in Haux, in inima din Entre-Deux-Mers, isi datoreaza cunostintele galeriilor sale subterane construite din calcar, stanca de pe malul drept al raului Garonne in secolul al XVIII-lea. Ballarin Rose este un vin spumant cu bule fine si persistente realizat in totalitate din soiul de struguri Cabernet Franc, recoltati manual, prima vinificare dupa metoda traditionala, a doua fermentatie avand loc in sticla, maturat timp de 12 luni in galeriile naturale de calcar. Culoare: rose stralucitor. Miros: note de coacaze negre se amesteca cu arome de fructe confiate. Gust: este proaspat, suav. Finish-ul lung si fructat. Temperatura de servire: 5 - 8 °C.
